Main Courses - Tricolor Crusted Halibut

1 cup mixed Bee Balm, Bachelor’s Buttons, & Calendula flowers, finely chopped
12 small Shitake Mushrooms
¾ cup Parsley
1 tablespoon lemon zest, finely chopped
1/3 cup bread crumbs or cornmeal
1 egg
6 tablespoons unsalted butter, softened to room temperature
Salt
Freshly ground pepper
4 Halibut Filets (or other white fish)

Preheat the oven to 350 degrees. Mix the flowers, mushrooms, parsley, lemon zest, egg, and butter in a bowl. Spoon this mixture onto the fish. Once the fish is mostly cooked, turn on the broiler. Broil the fish until the mixture has crusted on top of it.
