Sticky Ribs

1 1/2 # pork spare ribs
2 T oyster sauce
4 T rice wine
4 T dark soy sauce
2 T black bean sauce
2/3 C orange juice

Spread out the spare ribs on a shallow dish. Mix together the oyster sauce, rice wine, dark soy sauce, and black bean sauce and spoon over the ribs until coated. Cover and leave in a cool place to marinate overnight.

Preheat the oven to 325* F. Transfer the ribs to a roasting tin with any marinate left in the dish. Pour over the orange juice, cover the tin with foil, and bake the ribs in the oven for 90 minutes.

Remove the foil, increase the oven temperature to 375* F, and cook the ribs for a further 30 minutes, basting them with the juices in the tin from time to time until the ribs are coated with a sticky glaze.

Serve hot as a starter for a Chinese meal, or as a main course with rice.
