Cilantro Shrimp With Mint Sauce

Large bunch of cilantro leaf
2 cloves garlic chopped
1 t grated ginger
3 T peanut oil
1 # large raw shrimp
Sauce
2/3 C coconut milk
1/2 green chili seeded & Chopped fine
2 t mint leaves chopped fine
1 t black sesame seeds

Place the cilantro, garlic, ginger and two tablespoons of peanut oil in a blender and puree. Spread out the shrimp in a Shallow dish, coat with the cilantro puree, cover and leave in a cool place to marinate 2 hours.

For the sauce, mix together the coconut milk, chili, and mint. Spoon into a small bowl and sprinkle over the black sesame seeds. Cover and chill until ready to serve.

Heat the remaining peanut oil in a wok and stir-fry the shrimp for one to two minutes until the turn pink. Pour in any marinade left in the dish and allow to simmer briefly. Serve the shrimp with the sauce.
