Chewy Energy Bars

INGREDIENTS

1 cup old fashioned oatmeal
1/2 cup almonds
1/2 cup pistachios
1/3 cup cranberries
2 tbsp ground flaxseeds
2 tbsp chia seeds (optional)
1/2 cup clover honey
(IMPORTANT: DO NOT substitute this honey type for another kind.
Clover is a lot milder in flavor compared to other honeys.)

INSTRUCTIONS

Prepare an 8x8 inch baking pan by lining with parchment paper, or lightly coat with cooking spray.

In a medium bowl, combine all ingredients except the honey.

In a small sauce pan, bring honey to a boil; reduce heat to low and simmer for 5 minutes; stirring frequently. Be careful not to let honey burn.

Start with a 1/3 cup of boiled honey, and pour over nut and seed mixture; quickly mix until well combined. (I used 1/3 cup plus 2 tbsp. to be exact)

Continue to add honey until desired sweetness has been reached.

Press mixture into prepared pan; let cool completely before cutting.

For harder bars, pop in the refrigerator to cool for 10-15 minutes.

NOTES

  • Honey can be a little overpowering for some people, so I'd suggest adding 1/3 cup of the boiled honey to the nut/seed mixture to begin with; although I did use an additional 2 tbsp. so the mixture was well coated. Put in the refrigerator and seal in a air tight container to harden and maintain freshness.
