Shauna's Roasted Veggies
Pre-heat oven to 400 F
Wash and chop a selection of veggies.
Line a cookie sheet with foil (for easier clean up)
A tiny drizzle of oil in the middle of the tray and start piling chopped veggies in a pile on top of it. Once finished adding veggies, pour a little more oil on the pile and get messy! Push it done and mush it so everything is covered and mixed. Add seasonings. Put in the oven for 15-20 minutes. Take out, mix up with a spatula. Put back in for 5-15 more minutes. Take out....blot excess oil. Enjoy!
Notes: Sometimes I drain excess oil at the halfway point. (If there's a noticeable amount) Or use a paper towel when finished (like French fries).
Veggies: Onions, carrots, peppers, broccoli, cauliflower, Brussels sprouts, cabbage, celery..... Things to avoid ...potatoes and zucchini (potatoes only if you cut them really small, and zucchini alone so you can judge it easier...it's get mushy.) Haven't done sweet potatoes, yams, or many kinds of squash yet.
Seasonings: Onion powder, taco seasoning, garlic powder, salt, pepper, curry powder, oregano, basil, rosemary, salt free Spike and salt free french fry seasoning. And combos are great. (Onion powder and pepper is a favorite)
