Mrs. Thurlow's Sugar and Spice Cookies
3/4 C soft shortening
1 C sugar
1 egg
1/2 C molasses
2 C all-purpose flour
1/2 t soda
1/4 t salt
1 t cinnamon
1/4 t ginger
Cream shortening (I use margarine) with sugar; add egg and molasses; mix until thoroughly
blended. Sift together, then stir in flour, soda, salt, cinnamon and ginger. (You may
want to chill dough at this point.) Press and mold into a long smooth roll about two and
on half inches in diameter. Wrap in waxed paper and freeze. Slice with a sharp knife
in thin slices about one-eighth inch thick. Place slices on ungreased cookie sheets,
leaving a little space between cookies. Bake in a 350 degree oven for about 10 minutes,
or until lightly browned. Makes three or four dozen cookies.
