Oat cakes

1 1/2 cups oats
2 tablespoons ghee or unsalted butter
2 tablespoons brown sugar
1 teaspoon cinnamon
1 teaspoon maca root powder (optional)
1/8 teaspoon baking soda
A pinch of salt
1/2 cup hot water
Honey to top cakes

Combine oats, powders, salt, sugar and baking soda and pour warmed ghee over the mixture. Add hot water and stir until ingredients form a stiff dough. Lay the dough onto a long sheet of wax paper and fold over so your oat mixture is completely covered. Pat dough flat, remove wax paper and cut into quarters. Shape the quarters into balls and press lightly with the palm of your hand to flatten. Place cakes onto an oiled griddle and cook until golden brown. Remove from heat and drizzle honey onto each cake.

Serve warm and pair with Greek yogurt, fruit, edible flowers or all 3. Makes 4 oatcakes.


Bannocks (Oat Cakes)

Ingredients 2 cups old fashioned oats, briefly whirled in a blender to make oat meal (about 1 1/2 cups)
generous pinch of salt
1/4 teaspoon baking soda
1 tablespoon coconut oil or butter, melted
5 dates, pitted and chopped and soaked briefly in
1/2 cup hot water

Method

  1. Preheat the oven to 350 degrees.
  2. Measure the oats into a blender and pulse it a few times to break them into a mix of pieces and flour. This helps make a product that will form a dough.
  3. Combine the oats, salt and baking soda in a mixing bowl and pour the coconut oil over top.
  4. Add the water and dates and stir to form a stiff dough.
  5. Turn out onto a greased baking sheet and pat or roll into a circular shape of the desired thickness, I did 1/4". (To roll, place a piece of waxed paper over the dough to prevent sticking)
  6. Bake for 25 - 30 minutes, turning the pan every 15 minutes or so.
  7. The bannocks are done when the top is dry and the edges start to brown.
  8. Cut into wedges to serve.


Scottish Bannocks or Oatcakes

Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes

Ingredients:

1 1/2 C oatmeal
1/8 tsp. salt
1/4 tsp. baking soda
1 Tbs. butter
1/2 cup hot water

Preparation:

Combine oatmeal, salt and baking soda in a bowl. Melt the butter, and drizzle it over the oats. Add the water, and stir the mix until it forms a stiff dough. Turn the dough out on a sheet of wax paper and knead thoroughly.

Separate the dough into two equal portions, and roll each one into a ball. Use a rolling pin to make a flat pancake that is about 1/4" thick. Cook your oatcakes on a griddle over medium heat until they are golden brown. Cut each round into quarters to serve.

To serve, split the bannocks and spread with butter. They're excellent with soups or with a big dollop of honey.
