Lentil Tomato Soup

onion, chopped
2 cloves garlic, diced
1/2 c brown rice
1 c lentils
8 c water
1 large can whole tomatoes, diced or crushed
15 oz can tomato sauce OR can of tomato puree + water
2 tsp ground cumin
2 tsp oregano
1/4 c soy sauce

grated cheddar cheese
plain yogurt
salt, pepper to taste

Saute garlic and onions, then add grains. Add water, boil, simer 45 mins or til grains are done. Add tomatoes, tomoato sauce, spices and simmer 1/2 hour. Add soy sauce when done or nearly done.

Serve with cheese, yogurt on the side -- add as desired.
