Curried Chicken or Turkey

1 pound of roast turkey or chicken, sliced thick (#10) at the Deli counter
1/2 cup mayonnaise
1/2 cup plain yogurt
1 tablespoon fresh lime juice (about 1/2 of a lime)
1 tablespoon fresh ginger, grated
1 tablespoon curry powder (use more or less to taste)
1 drizzle of honey (don't measure, just drizzle in about 1 tablespoon)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 small red onion, chopped (about a cup)
1 firm-ripe mango, peeled, pitted and chopped
1 cup seedless grapes, halved
1/2 cup salted roasted cashews, coarsely chopped (optional)

Cut chicken or turkey into 1/2 -inch cubes and put into medium bowl with onion, mango, and grapes. Whisk together mayo, yogurt, curry, lime juice, honey, ginger, salt and pepper. Gently stir into chicken mixture. Sprinkle top with cashews (optional)

Four to six servings.
