Eat fresh at Capitol: SPSCC's culinary arts program uses organic, local food for café

"I like being able to use some of the organic produce," said the graduate of South Puget Sound Community College's baking and pastry arts program who works at Fresh Measures cafe. "It's nice to use fresh products."

SPSCC's culinary arts program opened a cafe in the Capitol's Pritchard Building in January at the beginning of the legislative session. It has signed a 19-month contract to provide state workers, lobbyists, lawmakers and visitors with food after the previous vendor from Community Services for the Blind decided not to renew its contract.

To Debbie Van Camp, head of food services at the college, this was the perfect opportunity to market the culinary program, get the school more involved with the community and provide an opportunity for students "to have a real, public and fast-paced work environment."

It also was a chance to change up the menu a bit. Eighty percent of the food at Fresh Measures is organic.
